Breakfast! Mijn allerfavorietste eetmoment van de dag! Omdat je werkelijk eindeloos kan variëren met ontbijt: van hartig tot zoet, van warm tot koud, van crispy tot vloeibaar. Een van mijn favorietjes zijn pannekoeken! Niet zo lang geleden kwam ik er achter dat American pancakes (die kleine dikke) zo makkelijk te maken zijn! En perfect voor ontbijt. Bij deze vast het recept daarvoor. Andere lekker ontbijtrecepten volgen binnekort!

Winter Worthy Morning Food
Oh how I love home-made breakfasts. Especially on sleep-late-sundays or wintery-stay-inside-days. As a pancake lover, I recently discovered the simplicity of the famous undutch thick American Pancakes. I ran straight to the supermarket for some original maple syrup and made the fluffiest dietproof tasty pancakes ever! Love to share the ‘how-to’ with you! (and from my foodloving heart: please don’t skip the maple syrup!)


  • 115 g plain flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 150/200 ml soy milk
  • 1 1/2 mashed bananas
  • 2 olive or sunflower oil for cooking

For serving:

  • Blueberries
  • Maple syrup
  • Cinnamon
  • Or whatever you like!!
  1. First mash the bananas.
  2. Add the (sifted) flour, baking powder and 1/4 of the soy milk to the bananas and mix to a smooth thick batter.
  3. Whisk the rest of the soy milk with the salt until it starts to become a little stiff (you can use a milk frother for this). Fold this mixture into the batter. (Don’t worry about a few lumps. They will do no harm to the pancakes).
  4. Let the batter stand for a few minutes.
  5. Heat a good non-stick pan on a medium heat and add a little oil (not too much!). Pour a ladle (or two depending on the size of the pan) of your batter into the pan. Don’t make them too big, they’re not like the duth (huge) pancakes.
  6. Fry them  until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and firm. Repeat until all the batter is used up. You can keep the pancakes warm under a silver foil instead of the oven, they taste best fresh out the pan!
  7. Serve with real maple syrup, blueberries or anything you like! (I love those pancakes with chocolate spread: mmmm).
